Basic sponge flan

 



Preparation Time: 10 minutes

Cook Time: 15 - 20 minutes

Serves: Makes 2 medium flans

A simply decadent desert that will impress everyone.

Ingredients

125ml milk

60g butter or margarine

200ml (160 g) sugar

375ml (210 g) Snowflake cake flour

10ml Snowflake baking powder

1ml salt

2  extra-large eggs

Method

  • Heat milk and butter in a small, heavy-based saucepan. Do not boil, stir until butter is melted. Remove from heat.
  • Beat eggs and sugar together until light and creamy.
  • Sift flour, baking powder and salt together. Add, alternately with milk mixture, to egg mixture. Beat lightly until smooth.
  • Spoon mixture into two lined and greased 24 cm flan pans. Bake in a preheated oven at 180 °C for 15 - 20 minutes.
  • Leave in pans for a few minutes before turning out onto a wire rack to cool completely.
  • Fill with ginger filling, gooseberry and orange filling or pineapple filling.
